Cookbook Crush: March 2016 + Neiman Marcus CAKE!

We're new Costco members. That explains the 7 pounds of Nutella in my pantry. (That's what I'm telling myself anyway.)

Well, of course we must go up and down every aisle of Costco on each visit now...wouldn't want to miss a deal on something we didn't know we needed. That's when I spied The United Tastes of Texas by Jessica Dupuy. I stopped in my tracks...pretty much knowing it had to be mine. I didn't want to be hasty, though, so I opened to a random page. Yep. Sealed the deal. I needed it.

Texas is a BIG place. Did you know? We cook more than steak and tacos around here, and this book covers every corner of the state. I'm IN LOVE with this book. LOVE.

So far, I've made Amigo Pie (like a Tamale Pie, yum), Banana Pudding (hello, comfort food), King Ranch Chicken (and this recipe doesn't call for any condensed soup mixes...it's FABULOUS), and Neiman Marcus Cake.

Now, I'd heard of the Neiman Marcus cookies, I've even made them on the blog, but cake?!? This, I needed to try.

The cake is two layers, chocolate and cream cheese. The chocolate layer rises up around the edges creating a crust of sorts that is perfection. The chocolate cake itself looks like a brownie, but it's not. It's lighter and fluffy. The cream cheese layer is rich, but not too thick, like Goldilocks would say, "just right."

In the book, the recipe is baked in a 9 x 13" pan. I decided to make them in 9" round pans, making 2 cakes. Since I was giving one away, I baked them in these foil take-away pans, which I love. They're high-sided, so make sure you bake them in a 9" pan with tall sides, at least 3 inches.

{adapted from The United Tastes of Texas, makes two 9" round cakes}

2 1/4 cups unbleached, all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine sea salt
4 ounces unsweetened chocolate, chopped
3/4 cup unsalted butter, cut into tablespoons
2 cups granulated sugar
4 eggs, divided
1/2 cup milk
3 teaspoons vanilla extract, divided
8 ounces cream cheese, room temperature
2 cups powdered sugar

Preheat oven to 350. Grease two 9" round cake pans with tall sides. Stir the flour, baking soda, and salt together. Set aside.

In a bowl placed over a pan of simmering water, melt the chocolate and butter. Remove from heat and whisk in the granulated sugar. Whisk in 2 of the eggs, one at a time, until blended. Whisk in the milk and 2 teaspoons vanilla. Whisk the flour mixture into the chocolate in three additions.

Divide evenly between the two pans.

Beat the cream cheese and remaining vanilla until smooth. On low speed, beat in the powdered sugar, 1/2 cup at a time until combined. Beat in the remaining 2 eggs, one at a time, mixing until incorporated, scraping down the sides and bottom of the bowl.

Pour the mixture evenly over the chocolate batter, gently spreading with an offset spatula.

Bake for 45-50 minutes until set and a toothpick inserted in the middle comes out with a few moist crumbs. Cool in the pans on a wire rack.

Stitch Fix SHOES!!!

No cookies, no sugar, no Trader Joe's review today, just a Public Service Announcement...

Stitchfix.comis where you can go to have a personal stylist do your shopping for you. I've talked about Stitch Fix before on the blog and have gotten some really cool pieces. (As a matter of fact, I'm wearing my Stitch Fix grey & white striped cardigan WITH elbow patches right this very moment.)

I'd put my fixes on hold for a while I'm trying to shed a few *ahem* extra pounds I put on over the winter (fall, summer, spring...you get the idea.) ANYHOO. I read about Stitch Fix shoes and promptly scheduled my next fix.

I'm personally hoping for those yellow wedges. And the orange-y fringe sandals. And, well...the navy ankle tie little numbers. Ohmygosh. Shoes delivered to my house. In my size. That I can try on while wearing pajamas. Sold.

Anyway, I just thought if you'd been on the fence about taking the plunge with Stitch Fix, now might just be the perfect time to dive in!

Cookbook Crush: January 2016

I meant to tell you all about these cookbooks in October. And then in November. And then again in early December so you'd have time to order them for Christmas.

So, yeah.

This might be perfect timing, though, right? If you did not get these books for Christmas, well...it's time to treat yourself. (Or, ask for them for Valentine's Day.)

Georganne is the mastermind behind LilaLoa. Georganne is an artist with a fabulous eye for color and design. Her cookies are whimsical, beautiful and fun, and her book is just the same.

Packed with great cookie decorating info, the book contains recipes, tutorials, and tips. The book is organized alphabetically, so you'll find "eyeballs" under E and "Piping bags" and "Pumpkins" under P. Every letter is an adventure. :)

Homemade Gifts...made pretty with help from The Container Store

It's crunch time. This is the week where I find myself making homemade gifts. I love homemade, whether baked or not. There's something special about receiving...and  making...homemade gifts.

Earlier this month, I did a little homemade gift demo at my local Container Store. You guys. Is The Container Store Gift Wrap Wonderland the most magical place on earth or what? I could, actually I DO, spend hours there every year strolling up and down the aisles deciding on the perfect wrap, ribbon, tags, boxes, and tins.

Sometimes I'm there so long, I'm afraid they might call security. But hey...they invited me to do a demo. That meant I could stay for hours on end, no questions asked. ;)

Here are three homemade gifts you can make TODAY!

Instant Chai Tea Mix

This gift is the quickest. It's perfect to have on hand when someone pops by your house with an unexpected gift. You know, you thought you were on a Christmas card friend basis only? Yeah. OK...make a few of these up today. You know you'll need it.

I'm crazy about all of the pretty gold touches here. This would be a really pretty New Year's gift as well!

You'll need:

Instant Chai Tea Mix 
2 1/2 cups unsweetened instant iced tea
1 1/2 cup sugar
1 1/2 cups dry milk powder
1 cup French vanilla powdered creamer
1/2 cup plain powdered creamer
1 tablespoon ground cardamom
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground white pepper

Process all ingredients in a food processor until combined and a fine powder. Place into the jar (this recipe will fill two jars). Add tulle and gift tag with instructions to place 2 tablespoons mix in a mug. Pour boiling water over. Stir and serve.


Sugar Scrubs

You might want to make extra and keep a few for yourself. Sugar scrubs are so easy to make, you'll wonder why you ever paid big bucks for them! These were totally inspired by this cute little wooden caddy at The Container Store. I just had to find a way to use them!

You'll need:

Basic Sugar Scrub 

1 cup granulated sugar
1/2 cup grapeseed oil

 Stir together until well blended.

For Rosemary Sugar Scrub, stir in 2 tablespoons chopped rosemary and 1/4 teaspoon rosemary essential oil.

For Peppermint Sugar Scrub, stir in 4-6 drops peppermint essential oil. Optional: add red food coloring to half and layer the scrub for a candy cane effect.

To assemble: Wrap plaid tape around the wooden tray. Place one type of scrub in each jar. Print or write the name on an Avery label and affix to top of jar. Use a glue dot to secure the peppermint to the top of the peppermint scrub jar. Use the plaid tape to secure the ends of the rosemary sprig into a wreath shape. Use more tape to affix to the top of the rosemary scrub jar. Place jars in the caddy and tuck the shred in to fill. Add a scoop and gift tag.


Decorate your own snowman cookie kit
(AKA: do you want to build a snowman...cookie?)

Of course, there would have to be a cookie gift in the mix. This one is a decorate your own snowman cookie kit. Of course, you could use any shape here. I can't decide which is cuter: the cookies or that darling red tin?!?

With this kit, you'll give the cookies plain and supply your recipient with food coloring pens to do their own decorating. I like to decorate the top cookie in the stack to give an idea.

The pictures show these done super simply with un-iced cookies. If you have more time, cover each cookie in white royal icing. (If you attended the demo, that's how they were shown.)

You'll need:

To assemble: Bake the cookies, and ice with white royal icing (if using). Let the cookies dry completely overnight. Decorate one cookie with food coloring pens as an example. Stack the cookies, three per bag, using holly-printed parchment between the cookies. (I used 6 cookies per kit, three cookies per bag.) Place the decorated cookie on the top of the stack. Tie each bag with baker's twine.

Fill the bottom of the tin with shred. Tie food coloring pens together using the snowball ribbon (so cute!). Place pens and packaged cookies in the tin. Add a gift tag to the top and more snowball ribbon around the tin.

The Container Store Event, December 5th!

I hope you all are having a fabulous Thanksgiving week!  I may never change out of my stretchy pants. Gosh, I love stretchy pants.

First...no Trader Joe's post this week. We're on a little vacation...this is the first time I've turned on my computer in DAAAAAYS and I've somehow managed to fill my time without it. Imagine that.

Sea Salt Sweet by Heather Baird

You guys know Sprinkle Bakes, right? Sprinkle Bakes is the blog written by Heather Baird; it's filled with whimsical, delightful, BEAUTIFUL desserts. It's one of my favorite reads on the internets.

Well, Heather has a new book out, Sea Salt Sweet: The Art of Using Salts for the Ultimate Dessert Experience. The title alone had me hook, line, and sinker. I can think of almost no better combination than salt with sweet.

Right out of college, I went to work for Delta Airlines. I have very vivid memories of standing in the airplane galley with some very southern flight attendants who were pouring bags of peanuts into their Cokes. I'd never seen such a thing!

Hey guys! Well, I've been up to my eyeballs in a couple of projects this week. I promise to get back in the swing of things with cookie decorating and recipe posts NEXT week.
