Texas Peach Pecan Cobbler

When the good folks at Ozarka Water contacted me to see if I'd write a little bit about what I love about Texas, it took me about a nanosecond to say yes.

We love Texas. Neither Mr. E or I were born here, but I've lived most of my life in Texas...and we've spent 18 of our almost 20 years of married life here. (Wow. I can't believe I just typed that sentence.)

Mr. E's job took us out-of-state for a few years and while it was beautiful, it was not our beloved Texas. I would go to the grocery store and think...they don't have tortilla chips and crackers and hamburger patties shaped like their state? What does the state flag here look like anyway? (You can't go far in Texas without seeing a Texas flag.)

Here's a short list of what I love about Texas:
  • Tex-Mex: this includes a long list of tacos, queso, salsa, and chips...my life (and my tummy) would be empty without it. 
  • BBQ: this is NOT a backyard cookout. BBQ is beef (do you hear that, Carolina?) slow cooked over low heat and served with a spicy tomato-based sauce. And pickles. And a slice of white bread. 
  • The Texas flag: When you're out-of-state and you see a Texas flag, it brings you right back home. 
  • Bluebonnets: If you've never seen a field of Texas bluebonnets, well, check out social media in the springtime. It's in our contract at Texans that we must plop our children in a field of them and take pictures...even if it's on the side of the highway. 
  • Willie Nelson and Lyle Lovett: Texas boys with a purely Texas sound.
  • Boots and Beer: I don't care where you are in Texas...a wedding, a 5-star restaurant, the symphony, a quinceanera...it's never too fancy for boots and beer. 
  • Whataburger, Blue Bell Ice Cream, Chuy's, Torchy's, Pappasitos: and a thousand other Texas food establishments and companies that know that it doesn't have to be fancy to be delicious. 
  • The people. We've lived in Dallas and Houston, and a few months in Amarillo for me. Texas people are friendly people.

Two other things I love? Texas peaches and pecans. Be still my heart.

This Texas Peach and Pecan Cobbler is easily the best cobbler I've ever made. Pecans are not typically found in cobbler, but I think they should be...they add texture, crunch, and flavor. The cobbler batter, sweetened with brown sugar so it's rich and caramel-y, bakes up a bit like a cake. The Texas peaches are coated in a warm almond syrup before adding them to the batter. Divine.

Serve it warm, topped with vanilla ice cream, preferably Blue Bell Homemade Vanilla.

Texas Peach and Pecan Cobbler

1 cup unbleached, all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 cup packed light brown sugar
2 TBSP salted butter, room temperature
2 eggs
3 TBSP milk
3/4 cup chopped Texas pecans
1/4 cup water
1/3 cup granulated sugar
juice of half lemon
1 teaspoon almond extract
3 cups peeled and chopped Texas peaches
vanilla ice cream

Grease an 8 x 8" pan. Preheat oven to 375.

Whisk the flour, baking powder, and salt together. Set aside.

Beat the brown sugar and butter together until combined, then beat in the eggs. Mix in the milk. On low speed, add the flour mixture just until incorporated. Stir in the pecans.

Pour batter into the prepared pan.

Heat the water and granulated sugar in a small saucepan over medium heat, stirring until the sugar is dissolved. Once the mixture comes to a simmer, lower the heat and keep at a simmer for 5 minutes, stirring frequently. Stir in the lemon juice and almond extract. Turn off the heat and stir in the peaches.

Spoon the warm peaches and syrup over the batter.

Bake for 40-45 minutes, tenting with foil after 30 minutes.

Serve warm, topped with vanilla ice cream.

Cookies and Cream Cake

Jack started off his summer at camp with our parish youth group. This was his first time on an airplane without one of us and the longest I'd ever gone without seeing him. Jack was more than ready to go...it was his mother who'd been dragging her feet about letting him fly off to this camp for years now.

It's a beauty. The cake is light and moist with a fine crumb. The frosting is creamy and luscious. *sigh*

Sweet on Trader Joe's Saturday : Mango Coconut Caramel Corn

There was no choice other than to review another one of Trader Joe's mango offerings this week. If you haven't been to Trader Joe's lately, the store is in all-mango-all-the-time-mode. Mango is EVERYWHERE.

When we bought the Mango Joe Joe's to review, the cashier told us that the popcorn was his favorite mango offering. Yesterday when I bought a bag of popcorn, a (different) cashier's eyes lit up when she saw the bag, "this is back in stock??!?!?" I have a feeling she bought a few bags on her lunch break. She also encouraged me to break open the bag for the ride home. I like enablers.

A 9.5 ounce bag of Trader Joe's Mango Coconut Caramel Corn costs $2.99.

A mom's (my) take: I'll be frank. I'm not a fan of caramel corn. Cracker Jacks are one treat that I will pass up every time. This caramel corn, though, this is awesome. It all starts with big, fluffy popcorn...it's so fluffy!!! The caramel coating provides a crisp, crackly crunch. Lightly sweetened, the caramel has subtle mango and coconut flavors. With coconut flakes listed as an ingredient, I thought these might be a mess...they're not. The flakes are incorporated into the caramel coating. It is COMPLETELY addicting. I think these would be a perfect bar snack at a tropical resort. Or, just in my backyard with one of these.

A teenager's (Jack's) take: I never would have expected mango and popcorn to be associated... well, Trader Joe's has done it again! I love this stuff - the mango leads off during the first few seconds of biting into a piece, followed by a fairly strong coconut flavor which goes nicely with the caramel corn base itself. My only wish is that the mango would be more evident and last a bit longer--but other than that, it's great!

Desserts for Dudes : Let's Taco 'Bout Cookies

It started with hot dog cookies. Then, there were fried chicken cookies. Next...cookie fries and cheeseburger cookies. Now, I bring you taco cookies. Something about combining junk food and cookies makes me really happy. My boys seem to love them, too.

In honor of Father's Day month, it's time for more Desserts for Dudes. Yes, it's true that this is a generalization. Yes, dudettes can enjoy these desserts as well. I had to laugh last week when some tweeters on twitter were getting their knickers in a knot over the term "Desserts for Dudes."
Let not take our desserts so seriously (or literally).

...these really are simple to make, and so much fun.

When my boys suggest going to Taco Bell, I normally roll my eyes, but the truth is that a Taco Bell bean burrito with two packets of Hot (not Mild, not Fire) sauce is one of my favorite things. I know, I know. Add it to my list of offenses with liking Cool Whip and canned frosting. ;)

To make Taco (Belle) Cookies, you'll need:
  • circle cut-out cookies
  • bench scraper or knife
  • royal icing, tinted with AmeriColor (or Hobby Lobby) coloring: ivory mixed with gold (shell), warm brown with a bit of super black (meat), super red (tomatoes/lips), bright white (sour cream), electric orange (cheese), electric green mixed with leaf green (lettuce), and super black (eyes)...or similar shades
  • disposable icing bags
  • squeeze bottles
  • couplers and tips: #1, small leaf
  • toothpicks

First, make the cookies. Use a circle cookie cutter, then slice in half using a bench scraper or knife. 

Once cooled, thin the taco shell colored icing with water (reserving a bit of unthinned icing for later). Add water a bit at a time, stirring gently. Thin until a knife drown through the middle of the icing disappears in a count of 12-15 seconds.

Cover with a damp dish towel and let sit for a few minutes. Stir gently with a silicone spatula and pour slowly into a squeeze bottle.

Outline and fill the cookies with the same consistency icing. Use a toothpick to nudge icing into spaces and pop any large air bubbles.

Let the icing set for about an hour.

Use the reserved shell icing to pipe a curved line across the cookies, making an opening for the fillings.

Thin the icings for the meat, tomatoes, and sour cream using the same method. Reserve some of the red icing for later before thinning.

Use squeeze bottles to add the fillings to the tacos. Start with the meat, then add the sour cream and tomatoes.

Place the orange icing in a bag fitted with a #1 tip. Pipe on the cheese.

Using a leaf tip, add a squiggle of lettuce, holding the tip flat. (Practice first on a paper towel or plate.)

Use the thinned taco shell colored icing to fill in the front of the taco, adding a little dimension.

Let the icing dry for about an hour.

To make the Taco Belles: using #1 tips, add eyes and eyelashes in black icing. Add the lips in red.

Let the cookies dry uncovered for 6-8 hours or overnight.

Sweet on Trader Joe's Saturday : Shooting Stars Cookies

With packaging this cute and cookies so unique, there's no passing up this latest offering from Trader Joe's.

We're reviewing Trader Joe's Shooting Stars: chocolate-coated sugar cookies covered in popping candy. The box description reads, "each star-shaped cookie is drizzled with semi-sweet chocolate, then topped with carbonated candy "meteoroids" that pop in your mouth..."

A 4.25-ounce box costs $2.99.

There's also a warning on the box. This is NO JOKE, people. Do not open the packaging near your face. The popping starts immediately and is quite vigorous.

A mom's (my) take: The cookies are good...crispy, crunchy, and with a heavy dose of really great chocolate. I was expecting the popping candy to be flavored like Pop Rocks, and it's not...which I think is smart. It's all chocolate and sugar cookie flavor with an added popping dimension of fun. Here's the deal: each box should come with eye protection. I'm not kidding. Right out of the box, the candies start (energetically) popping. Be SURE to close your eyes as you go in for a bite. Cookies with a side of danger. I kinda like it.
Overall rating: 5 of 5 stars (Maybe subtract off a star for potentially putting an eye out. ;))

A teenager's (Jack's) take: Love these! The popping candy alone make these a joyride for your whole mouth, but fortunately, the rest of it is great. The base of a classic shortbread-y sugar cookie and a flavorful chocolate covering are awesome in themselves, yet they don't steal attention from the candy topping... I would eat the whole box, but I anticipate my head would explode!

Desserts for Dudes: Guinness-Vanilla Bean Frosted Mocha Brownies

It's Desserts for Dudes time again! Every June on the blog, I try to feature a few dude-friendly desserts. You can check out past installments here. :)

These brownies have been rattling around in my head for a while now, but I thought I'd wait until June to make them. Beer + brownies = dude food.

Since Guinness has those lovely coffee notes, I decided to go for mocha brownies. The result? A rich, fudgy, espresso-spiked brownie slathered with a thick layer of luscious vanilla and Guinness frosting. The beer in the frosting smells divine and tastes even better.

If only I could order a pint of Guinness frosting at our local watering hole!

Feel free to use any dark beer here...stout, porter, bock...just maybe not Bud Light Lime. 

To make the brownies, you'll mix everything right in a saucepan; I love that. Maybe that's what I love making brownies so much.

Once they cool, you'll whip up the frosting. (You won't need all of it, so have a spoon ready for eating the remainder. I won't tell.)

Slather those brownies and pop them in the fridge to set up. I like these brownies served cold, right out of the fridge. (Maybe it's the beer?)

Guinness-Vanilla Bean Frosted Mocha Brownies
{makes 24 brownies}

for the brownies:
3/4 cup unsalted butter
1 cup packed light brown sugar
1 cup granulated sugar
1 cup Dutch-process cocoa powder
1 teaspoon kosher salt
1/2 teaspoon baking powder
1 TBSP vanilla extract
1 TBSP espresso powder
4 eggs
1 cup unbleached, all-purpose flour

for the frosting:
1 cup unsalted butter, room temperature
2 pounds powdered sugar
1/2 cup (settled and not foamy) Guinness
2 teaspoons vanilla bean paste
2 pinches fine sea salt


Grease a 9x13" pan. Preheat oven to 325.

In a medium saucepan, melt the butter over medium-low heat. Once melted, stir in the sugars. Stir and heat until the sugar is hot, but not boiling, just another couple of minutes.

Remove the pan from the heat and stir in the cocoa powder, salt, and baking powder. Combine the vanilla and espresso powder, then add to the batter. Whisk in the eggs one at a time. Stir in the flour.

Spread the batter into the prepared pan. Bake for 28-30 minutes, or until done. Place on a wire rack to cool.

Make the frosting:
Cream the butter until smooth. Sift in the sugar, add the beer, vanilla bean paste, and sea salt. Mix on low until combined, then increase the mixer speed to medium-high and beat for a few minutes until smooth and thick.

Spread 2/3rds of the frosting onto the cooled brownies. Refrigerate for at least one hour before cutting. Using a bench scraper makes for the easiest cutting.

Serve cold. With or without a Guinness. ♥
